Are red chilli enchaladas more of a Northern Mexican (desert area) dish, or are they more adjectives contained by S. Mexico?
Southern Mexico being more a jungle climate, and Northern person either desert or steppe.
Answers: You know, I get in this debate a short time ago a few days ago and a very interesting one it be indeed. To make a long story short...it is more interior Mexican than anything else. The real debate is whether or not it is more north inner or south central. That, we may never know.
geauxgid is right.... nearby are enchiladas almost anywhere in Mexico (mostly around the medium plateau), and you can find them both red and green so I don't think there's a place where on earth they're more or less popular. The most outstanding ones are enchiladas potosinas (from san luis potosi state) and also those made in Michoacan state (placeras), and both are red. Both states are within the central chunk of the country.. I dont know but i love green chilli enchiladas with chicken, sour cream, cheese and a COKE.
