Answers:    There's so many dishes out ther, so i'll only just mention my favorites:

Costa Rica - Chicheme and Picadillo de platanos

Colombia - Ajiaco and sopa de mondongo

Venezuela - Arepas, hallacas, and pabellon

Panama - Gallo pinto and chocao paname~no

PR - pastelones de carne and Lechon asado (with Bacardi, of course!)

Puerto Rico is a country (it is not fully sovereign but still it is a country). Panama was once a province of Colombia and it is the "put-on country" in the catalogue , not Puerto Rico, even panamanians recognize that their country be invented as an excuse for the creation of the panama canal. Puerto Rican cuisine is customary worldwide. From Bacalaitos to Asopao de Pollo. From Pasteles to Arroz con Gandules.

Puerto Rico - (people vote it's great, but I found it kinda normal, but still it's typical) Mofongo
Venezuela-arepas I go to Costa Rica many years ago (probably be at least 10 years), but I stayed next to a host family for a week. I remember ingestion alot of foods that would be the same as consumption here in the US, but I do remember my host family unit served us alot of fruits, like bananas, papayas, devotion fruit, grapes, mangos. I remember seeing a McDonald's in San Jose. Could smell the coffee when we departed the airport..
Puerto Rico:

Rice & red beans
Pernil (fried pork)
Carne guisada (stewed beef)
bacalao (salted cod fish)
tostones (plaintains pressed flat & fried twice)
puerto rican coffe (expresso type)
Fresh bread in the morning or evening snack
Roasted pigs, chicken
mofongo (ball made w/ smashed plantains & tripe)
modongo (soup made w/ tripe)
alcapurrias (fried & made w/ plantains)
Rum is puerto ricos national drink

I dont know about the other countries but some typical Colombian dishes are:

Sancocho -Soup
Aji- type of salsa
Arepas - cornmeal usuall shaped similar to a pancake or a ball depending who made it

Bandeja Paisa: White Rice, Red Beans, Arepa, Steak, Potatoe, Yucca, Plantain, Chicharron, Salas, some times Beets...

Appetizers:

Patacones- Fat Squishes Tostones or fried Plantains
Fried Yuca
Papa Criollas
Chicharron- Pork Rind
Chorizo- Sausage

Drinks:
Fruit Juices approaching: Lulo, Maracuya, Guanaban, Tamarindo
Soda: Manzana, Colombiana
Refrasco: (idont know if that is spelled right) Half Colombiana and Half Beer
Liquor: Aguardiente
