It's best to go from November-March. The weather is the best during those times as it is the Southern Hemisphere's Summer. During the middle of those times, watch out because the thieves are contained by full force during tourist season.
As for things to see, I'll copy my post from another answer:
-In Santiago: Cerro Bellavista- the view is handsome.
-Valparaiso: a quirky and colorful coastal city set upon 45 hills. You can bring back there by bus from Santiago (2 hours).
-San Pedro de Atacama: touristy and expensive, but gorgeous views of the desert. Also not far from Salar de Uyuni surrounded by Bolivia, the world's largest salt flats which is a breathtaking vista.
-Pucon: a quaint mountain town beside a beautiful tarn surrounded by black sands. You can climb Volcan Villarica in the neighbourhood the town or cross into Argentina to see Bariloche.
-Torres del Paine: a hiker's paradise beside unparalleled mountains
